Various drinks are prepared from elderberry flowers: from tea to champagne. However, the most popular is the refreshing lemonade or kvass from these flowers.
Elderberry flowers are very popular in folk medicine, as they have anti-inflammatory and antiseptic properties. In the 4th century BC, Hippocrates used elderberry flowers for medicinal purposes, after which the shrub gained fame as a tree of longevity. From elderberry, you can prepare infusions and tea from berries – jam or compote. But since everyone wants to drink a glass of something refreshing in hot weather, elderberry kvass/lemonade has become the most popular recipe.
Elderberry kvass recipe
- Elderberry – 30 Noura
- Water – 10 liters
- Sugar – 1 kg
- Citric acid – 25 g
- Mint – to taste
- optional lemon
Fill the flowers with water and let them soak for 24 hours.
Strain the drink, add sugar and citric acid, stir and leave for another 9 hours.
Then take the cans or bottles (Bottles are more reliable in the fermentation process), put lemon slices and mint in them if desired. Drink bottle, spin (If using jars, cover with nylon lids) and refrigerate for 3-4 days.
